Probiotics are live microorganisms that confer health benefits to the host when administered in adequate amounts and play a critical role in maintaining gut microbiota balance and overall health. This review summarizes recent advances in probiotic applications across the food and health industries, with emphasis on digestive, metabolic, immune, and mental health outcomes. Technological innovations such as microencapsulation, nanoencapsulation, smart polymers, and targeted delivery systems have significantly improved probiotic stability, viability, and functional efficacy. Emerging approaches, including next-generation probiotics, postbiotics, and synbiotics, offer promising avenues for precision nutrition and preventive healthcare. Despite these advances, several challenges remain, including strain-specific efficacy, loss of viability during processing and gastrointestinal transit, inter-individual variability in response, and inconsistent global regulatory frameworks. Addressing these limitations through robust clinical validation, personalized microbiome based strategies, and harmonized regulations will be essential for broader clinical and industrial adoption. Overall, probiotics represent a transformative interface between nutrition and medicine, with growing potential to reshape functional foods and preventive health strategies.
